Use your favorite challah dough or my favorite challah dough recipe. I love to create lots of different kinds of challah with my 6 pound batch.

Challah Onion Pockets

Ingredients
- Cooking spray
- 2 1/2 pound prepared challah dough
- 6 onions chopped
- 1 teaspoon kosher salt
- 1/4 cup olive oil
- canola oil
- 1 large egg beaten
Instructions
- 1 Preheat oven to 375 degrees F. Lightly grease 12 jumbo muffin tins.
- 2 Heat a large sauté pan over medium high heat, until you can feel the heat rising off it when your hand’s about 6 inches above it. Add olive oil, onions and salt and sauté until onions are caramelized about 15 minutes.
- 3 Meanwhile cut dough into 12 equal pieces and roll into balls. Lightly grease a work surface with canola oil and using a rolling pin, roll out each ball into a 5-inch disc.
- 4 Reserve about ¾ of a cup of the sautéed onions and set aside. Evenly distribute the remaining sautéed onions in the middle of each disc. Using your fingers, bring all the edges up and around the filling and pinch tightly to seal the filling inside. Place in greased muffin tins, seam side down, and repeat with remaining dough.
- 5 Let rise for about 20 minutes. Brush tops with beaten egg and top each evenly with the remaining sautéed onions.
- 6 Bake at 350 for 30 to 35 minutes or until golden brown. Let cool in the pan for 10 to 15 minutes, remove and serve warm. Or move to a wire rack and allow to cool completely before serving at room temperature.











you can use the dough for babka. just roll it out into a triangle & shmeer it with oil. then make a mixture of 1 c sugar, 1/2 c cocoa powder & 1/4 c oil (or less). spread it all over the babka. roll it up lengthwise & then twist it & then twist it again. Place in a greased loaf pan & let rise for 10 min., egg it & put it in a 350* oven for 40 min
sure you can make smaller ones in regular muffin tins or you can bake them free form (just shape and place on baking sheets with plenty of room to rise) or you can bake them like dinner rolls or cinnamon buns meaning: in a round, square or rectangular baking pan place them with enough room to rise and they will bake into one another and then you can easily break each one off.

was just thinking what i can use my challah dough for besides challah (i was table captain at the challah bake by me & brought home all the dough)
Looks great, but can it be made using something other than the jumbo muffin tins, which I don’t own?
I also serve my pulled BBQ short ribs on these!!! I can’t believe it — totally heaven! did you love???
Just made these for Shabbos last night. I glazed and sprinkled w poppy seeds. They smell and look amazing! Going to serve them w bbq shredded beef…
