The combination of sweet potato and marshmallow makes for a nice balance of sweetness without being overly so. But if you love a super sweet casserole add ⅓ cup brown sugar to the mashed sweet potato mixture.

Sweet Potato Casserole with Marshmallow Topping
Servings
Ingredients
- 2½ pounds sweet potatoes 4 medium, peeled and cubed
- 4 tablespoons vegan butter or extra virgin olive oil
- 1 egg
- 1 teaspoon vanilla extract
- ½ teaspoon kosher salt
- 1 cup coarsely chopped pecans
- 1 10-ounce bag marshmallows
Instructions
- Preheat oven to 350°F. Grease a 9- x 9-inch baking dish.
- Cover potatoes with water in a medium pot and bring to a boil over high heat. Simmer until tender, about 15 minutes.
- Drain well and return to the pot. Add margarine, egg, vanilla, and salt. Mash with a fork or potato masher until slightly chunky. Stir in pecans.
- Transfer to prepared baking dish and smooth top. Cover with marshmallows and bake at 350°F for 12 to 15 minutes, or until golden brown. Serve immediately.

Last year I made it with crushed granola bars on top and everyone loved it.
This basic recipe has been a family favorite forever. We always used canned yams/sweets and canned crushed pineapple — no extra condiments.
Mash it all, cover with marshmallows, and bake. I once decided to use fresh sweets, and my kids rebelled. WHY would I change a perfect recipe?
Okay — Back to late 1950’s homestyle gourmet for them.
A helpful word on marshmallows — Vegan marshmallows are available. They taste fine, but they melt differently so you have to keep close watch on the oven. I learned to heat the potato casserole first and then add them at the end got ready for a hasty removal from the oven.

Can I prep the sweet potato mixture the day before and put it in the refrigerator?
I have never tried that before, but I think it could work.
I thought fish was “Parve”, so what is the problem with combining?

Just a reminder . . . many kosher marshmallows are made with fish gelatin, so you can’t eat them with meat. This can prove to be a problem if you intend to serve this as a side dish on Thanksgiving if you are serving turkey or other meat.
You can absolutely freeze the casserole WITHOUT the marshmallow topping. Just add that once cooked and hot. Enjoy!
Aside from the topping, can this be made in advance? Will it keep in either the fridge or freezer?

Yes it should heat well covered. The only issues is the marshmallows sticking to the cover so keep it loose.
Yes for sure! The nuts add crunch and texture but are totally optional in fact my family prefers this smooth without the nuts! (I was out voted 🙂

Is the marshmallow whip truly parve? I’m looking for non-gelatin marshmallow here in Orlando. Any thoughts on making sure they melt?
Perhaps a bit too sweet, maybe it’s just us. We made this half marshmallow, half not for Thanksgiving because my husband didn’t want marshmallows. We ended up eating all of his half and barely any of the side with marshmallows. It tasted more like dessert than a side dish.

I wondered about the marshmallow whip also as the Kosher marshmallows don’t always melt well. I bought both the whip and the regular marshmallows. Don’t know which to use. I also add 1/2 can of pumpkin pie filling to my mashed sweet potatoes. Love the spices and then fill mini pie shells with the left over pie filling. The little kids love having their own pies.
