Turmeric Rice

This rice gets a boost of flavor, color and nutrition with the turmeric and don’t leave out the fried mint leaves.

Servings

4 Servings

Ingredients

  • 4 1/2 cups vegetable stock
  • 2 cups basmati or long grain rice
  • 1/4 cup olive oil
  • 1 tablespoon ground turmeric
  • 2 teaspoons ground ginger
  • 1 teaspoon salt
  • 1 bunch mint leaves
  • 1 tablespoon coconut oil

Instructions

  • Combine all ingredients for the rice in a large heavy saucepan. Place the pan on the stove, raise the heat to high, cover the pan and bring to a boil. Once boiling, stir the rice, cover the pot again and reduce the heat to low. Simmer the rice for 10-15 minutes, stirring occasionally, until the stock has reduced completely. Remove from the heat and fluff the rice with a fork.
  • Before serving the rice, heat a small saucepan with the coconut oil and place the mint leaves in the hot oil. Fry for 2 minutes on each side until crispy.
  • Top the turmeric rice with the fried mint leaves and serve.

    I did this the way I normally make rice by frying onion first and then added the rice and other ingredients. I also added black pepper. I think the stock was what gave it flavour. All in all I enjoyed it.

    I followed the advice of adding sauteed onions and garlic to the rice as well as an extra teaspoon of turmeric. It definitely had enough flavour after that.

    Needed more flavor. Didn’t like so much turmeric. Next time less turmeric more salt also some fresh garlic and maybe some onion and mushrooms. The mint was a nice touch.

    i also found it a bit lacking in flavor. i added not only the onions, wich i sauteed in 2 tsp evoo first but also added 2 cloves minced garlic. then the rice. i also added a bit of garlic powder & black pepper. love the idea of the fried mint leaves!!

    Try toasting the rice in some oil before boiling to bring out a nutty flavor. Add some margarine (1/2 stick) to the cooking pot to create a yummy, creamy texture and taste. Sautee some onions seperately and add to them at the end some rainsin, dried apricots, craisins etc. and use as a topping. You’ll get great results!

    I found this recipe to be lacking in flavor… Next time I will change the recipe a bit. it tasted like white rice.
