Thai Lettuce Cups with Peanut Sauce

Legumes are an amazing source of protein, there are so many different types out there to eat. The questions is, what really is a legume? We have gathered together recipes for chick peas, lentils, beans and peanuts, with a particular special focus on vegetarian dishes, but there are so many other legumes out there to try. So many vegetarians out there struggle to find good protein sources, and legume are a great source.  Try out one, two, three or even all of the recipes. They are all worth it. Chick peas:

Vegetarian Majadarah

Chick Peas are a great source of protein and they taste delicious when cooked with curry, like in this Slow Cooker Curried Chick Pea Stew or in a Middle Eastern style Vegetarian Mujadara (pictured above). When paired with a green vegetable, like spinach or chard, such as this Roasted Chick Peas and Chard recipe, the textures are delicious and can be eaten warm or cold. Don’t forget the best and easiest form of eating chick peas. You can roast them and eat them as a Rosemary Roasted Chick Peas snack.

 Lentils:

The above Kosher Champagne Sweetened Lentils Recipe can act as a great side dish to meat or fish, but because we are looking to stay strictly vegetarian, you can double it, depending on how many people you are serving, and even add some slivered almonds. You can also try this Lentil Salad which is great for Shabbat or any day of the week, because it can be served at room-temperature or even cooled. If lentils, quinoa and walnuts are your thing, and don’t forget turmeric, this Quinoa and Lentil Salad recipe is for you.

I know beans are a HUGE category and just a few lines can’t do them justice, but this White Bean Soup With Lemon and Garlic Cornbread says it all. As a note, just to be aware, green beans are not a legume (they are actually a fruit in case you were wondering), so they don’t fit into this article, but we have 41 green bean recipes so have fun!!

Peanuts:

Vegan Thai Lettuce Cups With Peanut Sauce are a big hit this time of year. Peanuts are not known by some to be in the same family as beans, lentils and chick peas, but they definitely are. Peanut, especially the butter, is great when used in a sauce, like in the Lettuce Cups and in this Whole Wheat Pasta With Cucumber And Spicy Peanut Sauce. Peanuts are also delicious in dessert, such as Baked Molasses Doughnuts with Peanut Chews Filling and also in a smoothy (think PB & B Smoothie). For a quick Peanut snack try Sweet Peanut Butter Cereal Bars.
