A Heartfelt Shabbat Menu

In this week’s parsha, Moses and Aaron come before Pharaoh and demand their freedom.  Amid signs and wonders, Pharaoh will not acknowledge the sovereignty of any power other than his own.  The Torah recounts that “the heart of Pharaoh was hardened and he would not let the children of Israel go.”  I love this idea of Pharaoh’s hardened heart, refusing to relent as the entire world around him is turned upside down and inside out.  This week we highlight a menu of hearts, (not actual hearts, although you can get those if you make our Yerushalmi, we’re sticking with hearts of palm and heart shaped foods.

Hearts of Palm Fritters

If you’re not one to just throw some hearts of palm in a salad, then turn them into fritters.  They get nice and flavorful when mixed up and pan fried. The perfect hardened hearts.

Osso Buco

This braised meat is a favorite by all lovers of Italian food and it is the perfect Shabbat dinner food, because it doesn’t dry out easily.

Caramelized Onion Mashed Potatoes

These simple mashed potatoes get their flavor from the caramelized onions and they make the perfect base to the osso bucco.

Wilted Spinach with Crispy Garlic

Add some green to the meal with this simple side.

Walnut Cookie Hearts Filled with Fig Jam

End the meal with these hardened heart cookies, just make sure to use vegan butter to keep them pareve.

That osso bucco looks so comforting and rich – perfect for winter. My husband would love it.

I would actually serve the spinach room temperature, cook it just before Shabbat and leave it out. That is what I do with all the greens I serve.

I had already planned on making braised short ribs, schnitzel, mashed potatoes and some kind of vegetable. Your menu looks so good, now I will add the wilted spinach. Hope it holds up on the blech until we eat.
