Hearts of Palm Salad

In Parshat Va’eira, we see the ultimate struggle of wills. Moses and Aaron perform incredible signs, yet Pharaoh’s heart remains stubbornly hardened. While he refused to soften even as his world turned upside down, we’re taking a much more delicious approach to “hardened hearts” this week!To celebrate our path toward freedom, I’ve put together a Quick and Easy Shabbat Menu that won’t keep you enslaved to the kitchen. It’s light, bright, and—unlike Pharaoh’s heart—completely “easy to swallow” with prep times that feel like a miracle.

HEARTS OF PALM SALAD WITH AVOCADO DRESSING

We’re kicking things off with a literal play on the Parsha! This hearts of palm recipe is the perfect way to acknowledge the “hardened hearts” of Egypt in a way that is actually tasty. It’s crisp, refreshing, and takes just a few minutes to toss together.

BALSAMIC ROASTED CHICKEN BREASTS

Sticking with our “Quick & Easy” theme, this chicken is a total crowd-pleaser. The sticky-sweet glaze is a beautiful contrast to the sharp trials of the Ten Plagues, and it’s on the table with almost zero effort.

ROASTED ROOTS WITH ROMESCO SAUCE

In the Parsha, the very earth of Egypt is transformed. We’re celebrating the bounty of the earth with these roasted root veggies. They bring a warm, grounded element to your Shabbat table that feels like true winter comfort.

BAKED PEAR PARCELS WITH LEMON SAUCE

This dessert is pure elegance. If you’re short on time, feel free to skip the dough—baked pears are naturally spectacular on their own! The lemon sauce is soothing and sophisticated, making it the perfect light finish to a winter Shabbat meal.

Quick Notes and Tips

The “Ten Plagues” Addition: If you want to lean further into the Parsha theme, consider adding a Blood-Red Beet Hummus or a Dark Chocolate “Darkness” Cake. It adds a fun, educational spark for the kids at the table!

Keep it Quick: For the pears, if the chamomile sauce feels like too many steps, a simple drizzle of honey and a sprinkle of cinnamon works beautifully too.
