Ingredients
- 2 Red Delicious apples peeled
- 3 eggs separated
- ½ cup matzah meal
- ½ teaspoon cinnamon
- 1 teaspoon salt
- 2 tablespoons brown sugar
- ½ cup water
- Extra-virgin olive oil
Instructions
- Grate apples with a hand grater into a large mixing bowl. 2. Beat egg yolks until lemon colored. Add to apples and mix well.3. Combine matzah meal, cinnamon, salt, brown sugar, and water in a small mixing bowl and mix thoroughly. Add to apple mixture.4. Beat egg whites in a medium mixing bowl until stiff peaks form. Fold gently into apple mixture.5. Heat evoo in a large, non-stick sauté pan.
- Drop heaping tablespoons of apple mixture into pan, smoothing tops slightly. 7. Sauté latkas until lightly browned on both sides.
- Drain latkas on paper towels. Serve hot.











I made this for Chanukah a few times. they were a huge hit. I even subbed out the flour for oat bran and baked them and they were delish
These were excellent. Even my husband loved them.
They will definitely be served again.
Only challenge is the number of bowls – which I reduced by one by using one that I beat the yolks for the mixture. worked out great

They freeze well if double wrapped (saran wrap then in freezer Ziploc,) it’s just the two of us also and I found it easier to make a whole recipe (of most things) and freeze! You should see our freezer!!!
Made this for shabbos but being that it was just two of us I tried dividing the recipe in thirds well I messed up somehow will try again when whole family is here
These were very tasty. But, they are very delicate latkes. Much lighter than their potato counterparts. The taste is great – would be great for Rosh HaShanah too 😉 You do get a work out beating those egg whites.
P. S. I asked my husband to help me make this, something I rarely do. He did almost all the preparation except for beating the egg whites. He just thanked me and said he enjoyed doing it.
Interesting combination of ingredients. Nice taste and texture; lighter than potato latkes. I might try mixing in some chopped nuts next time. It would also work nicely for Pesach or Rosh Hashana.

Very easy to make and we enjoyed the taste of the latkes very much. I found it a little difficult to turn the latkes as the batter was too loose.
Another great addition to our “latke repertoire.” Can’t wait to make this! Would you top it with greek yogurt?
i used this as an appetizer. really yummy & mde the house smell amazing. wanna try next time pears instead of the apples
Just made this for my husband (my tester) as “dessert”. At first he thought it was “interesting” and by the end of the latke, he pronounced it to be very good. Will definitely make it again (but this time I’ll be more careful with the bowl that toppled over and half the mixture fell on the floor.
