A traditional dish that is quick and easy to make. The parsnip, zucchini and onions add flavor and make it healthier as well. Baking the kugel in muffin trays is a fun and interesting way to serve the kugel.

Easy, Healthy Potato Kugel

Ingredients
- 2 Spanish onions
- 6 potatoes
- 1 parsnip
- 1 zucchini
- 6 eggs
- 1 ½ tablespoons salt
- ½ teaspoon black pepper
- 1/3 cup oil
Instructions
- Preheat oven to 350 degrees.
- Pour 1/3 cup oil in 9×13 baking pan.
- Place baking pan in the oven with oil. It is important for the oil to become hot.
- Meanwhile, grate onions, potatoes, parsnip and zucchini with a box grater or food processor
- Add eggs, salt and pepper. Mix until incorporated.
- Take out pan with oil from oven and place potato mixture in pan.
- Bake for an hour or until kugel is brown and crunchy on top.

gold will work too but idaho are starchier and work better. it works out to approx 4 pounds

What kind of potatoes work best?
Also, it says to add onions but they are not included in the instructions. I cooked it for 15 minutes without them in it (but then realized and added them in for the rest of cooking)! whoops! Please advise.
