Caramelized Onion Chicken

CARAMELIZED ONION CHICKEN

A traditional dish that is quick and easy to make. The parsnip, zucchini and onions add flavor and make it healthier as well. Baking the kugel in muffin trays is a fun and interesting way to serve the kugel.

Caramelized Onion Chicken

Ingredients

  • 2 Spanish onions
  • 6 potatoes
  • 1 parsnip
  • 1 zucchini
  • 6 eggs
  • 1 ½ tablespoons salt
  • ½ teaspoon black pepper
  • 1/3 cup oil

Instructions

  • Preheat oven to 350 degrees.
  • Pour 1/3 cup oil in 9×13 baking pan.
  • Place baking pan in the oven with oil. It is important for the oil to become hot.
  • Meanwhile, grate onions, potatoes, parsnip and zucchini with a box grater or food processor
  • Add eggs, salt and pepper. Mix until incorporated.
  • Take out pan with oil from oven and place potato mixture in pan.
  • Bake for an hour or until kugel is brown and crunchy on top.

    gold will work too but idaho are starchier and work better. it works out to approx 4 pounds

    Also, it says to add onions but they are not included in the instructions. I cooked it for 15 minutes without them in it (but then realized and added them in for the rest of cooking)! whoops! Please advise.
