Healthy Samboosak Stuffed with Chickpeas
Servings
Ingredients
- Filling:
- 1 can Eden chick peas
- 1 med onion chopped
- 3 TB oil
- Cumin
- Salt
- PepperDough:
- 2 3/4 cups spelt flour
- 1/2 cup smead semolina flour
- 1/2 Cup Oil
- 1 1/4 cup Water
- sesame seeds
Instructions
- 1 On medium heat saute onion until golden, add cumin. Mash chickpeas in chopper. Mix with onions. Add salt and pepper.
- 2 In a medium bowl mix flour, smead, oil and salt. Add water slowly and mix well. Put dough in fridge to firm up until ready to use.
- 3 When ready, roll dough into balls, flatten in the palm of your hand. Place filling insdie flattened dough, fold over to form half moon and crimp with thumb and forefinger. Dip in egg, then sesame seeds, place on tray, freeze and bag until ready to use. Pop them in the oven for 20 minutes before serving.

Decided to do another review as took these for lunch one day and ate them cold and they were really good. Plan to make these again.
I made these with normal white flour. Instead of chickpeas (which I am not keen on) I used mixed vegetables. I think I over seasoned them as I was in a rush but I thought they were really tasty. Although I halved the recipe I do think it’s a good idea to put them in the freezer for when you want them.
Could this be made with regular white flour if yes any changes need to be made?
