Shiitake Mushroom Soup

A delicious quick-cooking soup that will warm you on a cold day, but won’t weigh you down.  You will love the flavors that come out of this simple and easy to make soup.

Kosher Asian Shiitake Mushroom Soup Recipe

Servings

6 Servings

Ingredients

  • 2 3.5-ounce cartons sliced shiitake mushrooms
  • 6 cups water
  • 2 cups vegetable or chicken broth*
  • ¾  cup dry white wine
  • 1 leek washed and sliced; use just white part, about 1/2 cup
  • 2 teaspoons grated fresh ginger or 1 teaspoon ground ginger
  • 1½  teaspoons toasted sesame oil
  • ¼  cup fresh minced parsley or 1 tablespoon dried parsley
  • 1 tablespoon minced fresh dill or 1 teaspoon dried dill
  • 4 frozen crushed garlic cubes
  • ½  teaspoon sea salt

Instructions

  • Place mushrooms, water, broth, wine, leeks, ginger, sesame oil, parsley, dill, garlic, and salt in a 6-quart stockpot
  • Cover and bring to a boil. Reduce to a simmer and cook for 50 minutes.
  • Ladle into bowls and serve.

Notes

*If using chicken broth this would not be vegan nor pareve.

    The main part of the post where I saw this recipe called it part of a vegetarian/vegan meal. Chicken broth obviously isn’t either and shouldn’t be suggested as an option. This could easily confuse someone who is not themselves vegetarian, but is cooking for someone who actually is.

    I think soft tofu cut into small cubes would be a great addition to this soup, add it at the end or even just to the bowl you are serving it in.

    Sure you can — would be the perfect addition!!!! Specifically white meat chicken/chicken breast or tofu would work excellently here as a protein source.

    Hi Jamie!

    Big fan of your recipes. I have a hard time finding easy and delicious recipes for Shabbat lunch since you cannot heat up any liquids on the blech. We are not huge meat and cold cut eaters and I end up shaking and
    baking my chicken or doing a meatloaf or turkey salad.
