WONTON SOUP

Ingredients

  • 8 cups Chinese chicken soup stock*
  • 1/2 cup raw chicken diced
  • 1 tablespoon cornstarch mixed with 1 tablespoons water
  • 2 mushrooms thinly sliced
  • 1 carrot thinly sliced
  • 16 wontons
  • 1 green onion finely chopped, for garnish
  • 1 teaspoon sesame oil
  • Sprinkle of cilantro for garnish
  • 8 cups Cannedor fresh chicken soup or 8 teaspoons powdered chicken soup and 8 cups water
  • 3 tablespoons chopped fresh ginger
  • 10 cloves garlic sliced
  • 3 whole green onions
  • 1-2 teaspoons sesame oil
  • Dash of low-sodium soy sauce

Instructions

  • Wonton soup:
  • Coat chicken with cornstarch and water mixture. Set aside. 
  • Bring chicken soup to to a boil over high heat. Add chicken, mushrooms, carrot and wontons, and cook 4-7 minutes. 
  • Add green onion, sesame oil, and cilantro. Cook 1-2 minutes and serve.
  • Chinese chicken soup stock:
  • Make broth with either cannedor fresh chicken soup or powdered soup and water.
  • Add  ginger, garlic, green onions, sesame oil, soy sauce. Heat all ingredients together for 5-10 minutes to blend flavors. Bitayvon!

    I prepared this soup for our regular Chinese Food Christmas and found it disappointing. Although it was very easy, went together fast and smelled great, I found the Chinese Chicken soup stock (broth) made with powdered chicken soup powder to be nearly tasteless- even with 10 cloves of garlic and ground beef wontons! I added pepper, more soy sauce and sesame oil (which helped), but it still seemed something was missing.

    Next time I will use “real” chicken soup, which probably makes a big difference in taste!

    What is Chinese chicken soup, and how do you make the wontons.

    This recipe doesn’t explain how to make the wontons, the diced chicken goes into the soup or into the wontons?

    We have the recipe for Chinese Chicken Soup in our The Complete Asian Cookbook but for now, just do the following:
    Either use 8 cups of cannedor fresh chicken soup, or 8 teaspoons powdered chicken soup powder plus 8 cups of water to make a broth. Add 3 tablespoons fresh ginger, chopped, 10 cloves garlic, sliced,3 whole green onions,1-2 teaspoons sesame oil, dash of low-sodium soy sauce. Heat all ingredients together for 5-10 minutes to blend flavors. Bitayvon!
