Baked Crab Cakes
Easiest-ever to make, mock crab cakes, baked rather than fried, can be an appetizer or part of a main dish. Can easily be doubled.

Ingredients
Crab Cakes:
- 2 eggs
- ½ cup of mayonnaise
- ¼ cup chopped celery
- 2 tablespoons chopped parsley
- 2 teaspoons Dijon mustard
- ½ teaspoon salt
- ½ teaspoon Montreal steak seasoning
- ½ cup of bread crumbs
- 6 sticks of fake crab, chopped finely
Cilantro Lime Dipping Sauce:
- ½ cup of mayonnaise
- 2 tablespoons chopped cilantro (fresh!)
- Juice of ½ lime
- ¼ teaspoon chili powder
Preparation
Crab Cakes:
1. Mix ingredients together in a large mixing bowl. Shape into balls.
2. Bake at 400°F for 15 to 20 minutes.
3. Serve on a platter with dipping sauce.
TIP: For extra crunch, use panko bread crumbs and fry instead of baking.
Cilantro Lime Dipping Sauce:
1. Combine all ingredients.
2. Serve on top of each crab cake or on the side for dipping.
