Kale is filled with nutrients and is hearty and tasty. Simply sautee with a bit of garlic for a perfect side to any meal.

- 1 bunch kale, large stems stripped and discarded, leaves chopped
- 2 tablespoons olive oil
- 1 garlic clove, minced
- Pinch of dried hot red pepper flakes
- 1/4 teaspoon salt
Heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking. Add kale and saute until it begins to wilt. Add garlic and red pepper flakes and stir 1 minute. Sprinkle with salt to taste and enjoy.
