Bite Sized Zucchini Kugel
I made these the other day in small muffin tins and they were so cute and so delicious. I am sure they would be just as good baked in regular muffin pans, but there is something extra scrumptious about bite-sized food.

Ingredients
- 2 large zucchini, grated and drained of excess liquid
- 1 large onion, chopped
- ½ cup flour
- ½ teaspoon baking powder
- 1 teaspoon salt
- ¼ cup extra virgin olive oil
- 1 large egg
- ½ teaspoon pepper to taste
Preparation
Preheat oven to 350℉.
1. Combine zucchini, onion, flour, baking powder, salt, evoo, egg, and pepper. Mix well.
2. Grease mini muffin pan with 12 cups. Divide the mixture between muffin cups and place in oven for 30 minutes until cooked through. Allow to cool before removing from pan.
