Black and White Goat Cheese Cupcakes

Ingredients
- Cooking Spray
- 6 oz. soft goat cheese
- 1/2 cup sugar
- 2 oz. chocolate
- 1 cup Basic Batter (recipe below)
- BASIC BATTER:
- 1 cup flour
- 1 Tbsp + 1 tsp baking powder
- 1/4 tsp sugar
- 1/4 tsp salt
- 1 cup milk
- 3 beaten eggs
- 5 Tbsp. melted butter
- 1 Tbsp vegetable oil

1 Prepare Basic Batter and set aside.
2 Preheat oven to 325 degrees.
3 Grease a 6-cup nonstick muffin pan with cooking spray and set aside.
4 Puree the basic batter, goat cheese and sugar.
5 In a bowl, microwave the chocolate until melted, mixing every 30 seconds (about 1 minute in all). Let cool slightly.
6 Whisk 1/4 cup of goat cheese batter in to chocolate and divide among the muffin cups.
7 Top with the cheese batter.
8 Bake until slightly firm to the touch, 25-30 minutes.
