Black Bean Veggie Burgers

These are quick to make, but they also freeze well so you can double or triple and have burgers  on hand whenever you need a quick dinner. 

Freeze burgers in a single layer before stacking them.

Serve with Sweet Potato Fries or Beet Chips

Ingredients

Black Bean Burgers

  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 red onion, grated 
  • 1/2 cup finely chopped walnuts 
  • 1 egg 
  • 1 tablespoon chili powder 
  • 1 tablespoon cumin 
  • 1 cup cooked and mashed sweet potato
  • 1 cup grated sharp cheddar cheese (optional)
  • 1 teaspoon kosher salt 
  • 1/2 teaspoon freshly cracked black pepper
  • 6 whole wheat buns (optional)
  • Garnish: avocado slices, sliced tomato, sliced red onion, crisp lettuce leaves

Preparation

Black Bean Burgers

  1. Pour beans into a bowl, mash with fork, add grated onion, walnuts, egg, chili powder, cumin, sweet potato, cheese (if using) salt and pepper. Form into patties. Pan fry or bake until warmed all the way through and a crust has formed, about 40 minutes, flipping halfway through.
  2. Serve burgers with whole wheat bun, avocado and onion slices, tomato and lettuce.
