Broccoli Stalk Salad (Pickled)

I used to throw away the stalks, no one really eat them, but now I make these and serve them like pickles at every meal. I really make it like cucumber salad but it last even longer, about 2 weeks.

  • 3 broccoli salks
  • 1 teaspoon salt
  • 1 clove garlic, minced
  • 1/3 cup rice vinegar
  • 1 tablespoon sugar


Peel and slice broccoli stalks very thin with mandolin or food processor.  Place in a canning jar.  Bring vinegar, sugar, garlic and salt to a boil in a saucepan or in the microwave, stir until sugar is dissolved.  Pour over the broccoli stalks, add water to fill jar and cover and let sit at least an hour until ready.  Store in the fridge for at least 2 weeks.
