Chocolate Chip Banana Cake

Ingredients

  • 3 cups flour
  • 1 tablespoon baking powder
  • 2 cups sugar
  • 1/2 teaspoon salt
  • 3 large bananas
  • 2 eggs
  • 2 sticks margarine melted
  • 1 teaspoon vanilla
  • 1/2 cup soy milk
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees F.
  • Grease Bundt pan with non-stick baking spray.
  • In a bowl, mix flour, baking powder, sugar and salt.
  • In another bowl, mash bananas. Mix in eggs, margarine, vanilla and soy milk.
  • Slowly combine dry ingredients with wet ingredients. Mix for about 2 minutes. Be careful not to over mix.
  • Stir in chocolate chips and pour into prepared Bundt pan.
  • Bake at 350 degrees for 45 to 55 minutes, until a skewer inserted in the cake comes out clean.

Tips

  • Serve with a scoop of regular or non-dairy vanilla ice cream, banana slices and drizzled chocolate syrup.

    Without testing I can’t say, but I usually cut sugar by about 1/3 without a problem in similar recipes, the oil is more difficult.

    I want to make this recipe this week. Two cups of sugar sounds like a LOT. Since my bananas are very ripe so do you think 1&1/2 cups sugar would be enough?

    Finally got to try the banana cake. Easy enough recipe. No electric appliance needed. Good idea for quick, yom tov breakfast bread. My family loved it.
    To the concern about margarine I used safflower oil.

    Hey Rashi I use Earth Balance it’s a non trans fat, no hydrogenated oils, all natural, non dairy “buttery” spread or coconut oil.

    This cake is THE chocolate chip banana cake!! It is sooooo good! Moist, fluffy, yummy and everything you would want a chocolate chip banana cake to be!!!
    Make it once, if u like the flavours, you will definitely make it again, again, again and again!!!
