If you like sugar cookies you’ll love these cookies. They are soft on the inside, yet have a crunchy sweet bite.

- 1 ½ cups white sugar
- ½ cup butter or margarine, softened at room temperature
- 1 teaspoon vanilla extract
- 2 eggs
- 2 ¾ cups all-purpose flour sifted
- 1 teaspoon cream of tartar
- ½ teaspoon baking soda
- ¼ teaspoon salt
- 3 tablespoons white sugar
- 3 teaspoons ground cinnamon
Preheat oven to 400 degrees F.
Combine 1 1/2 cups white sugar, butter or margarine, whisk vigorously until creamy.
Add vanilla and eggs. Mix well.
Sift in flour, cream of tartar, baking soda and salt. Blend well.
Place dough in freezer or fridge to firm up so the cookies will be easy to shape.
Shape dough into 1 inch balls. Combine 3 tablespoons sugar and 3 teaspoons ground cinnamon. Roll dough in sugar/cinnamon mixture and place 2 inches apart on ungreased cookie sheets. Bake 8 to 10 minutes or until set. Immediately remove from cookie sheets.
