Coconut Lemongrass Rice

Fragrant coconut rice with lemongrass.

  • 1 cup Basmati rice
  • 1/4 cup coconut milk
  • 2 cup vegetable broth
  • 2 garlic cloves, sliced
  • 1 blade lemongrass
  • 2 kaffir lime leaves (optional)
  • salt to taste


Put rice in rice cooker with coconut milk, vegetable broth, garlic, lemongrass, and kaffir lime leaves. Season with salt and stir well. Turn on for white rice setting and cook until ready.  Serve with extra coconut milk if desired.
