Corn Flake Crumb Baked Chicken

This was my grandmother's recipe for breaded baked chicken, she called Southern "Fried" chicken, she dipped in oil, I dipped in egg whites. I added the honey for a little sweetness. It is very simple and reheats well.

  • 1 chicken, cut in 1/8ths or 6 skinless, boneless chicken breasts
  • 1/4 cup vegetable oil or 2 egg whites
  • 4 cups corn flake crumbs
  • Salt and pepper and/or garlic powder
  • 2 tablespoon honey


Preheat oven to 350. Spray a 9x13 pyrex with cooking spray.

Clean and dry chicken, remove skin if desired. Rub oil over chicken (or dip in egg whites).

Place corn flake crumbs in a shallow dish with salt and pepper and garlic powder.

Dip chicken the crumbs and place on a greased baking pan. Drizzle honey over top.

Put chicken in oven and bake for 40-50 minutes, until crispy and yummy.
