My latest favorite! I love how the flavors in cabbage salad get even better the next day—if only there would be leftovers.

Crunchy Cabbage Salad
Servings
Ingredients
- 4 cups shredded green cabbage
- 2 cups bean sprouts
- 1 cup shredded carrots
- 3 scallions chopped
- 3 tablespoons fresh cilantro or ¼ teaspoon ground coriander
- 1/3 cup mayonnaise
- 4 tablespoons low-sodium soy sauce
- Zest and juice of 2 limes
- 2 tablespoons rice wine vinegar
- ¼ cup roasted unsalted peanuts
- 2 cups chow mein noodles
Instructions
- In a large bowl, toss together cabbage, bean sprouts, carrots, scallions, and cilantro.
- In a small bowl, whisk together mayonnaise, soy sauce, lime zest, lime juice, and vinegar.
- Pour over salad and stir until evenly coated.
- Garnish with peanuts and chow mein noodles just before serving.











I will try the recipe and see how it goes. I love cabbage and LIME! Yum! For sure adjust to your palate though.
I found two limes was really overpowering and I couldn’t taste any of the flavors in the dressing. Next time I intend to use only one lime.
Also .. The dressing felt like way to much for the amount of salad .. and soaked it through and left the bottom of the bowl swimming. I ended up draining all the extra amount out once it was all coated.
oh for sure – I always swap one for the other in recipes (based on what I have in the house 🙂
Can I use lemons instead of limes?
Salted Peanuts will work! You can eliminate the Chow Mein noodles or try the crispy/fried wonton strips/bits – I think it could be NICE! Let us know please.
Can only find salted peanuts and wonton strips instead of chow mein noodles. How awful would that be??

Hey Lissa – you can leave them out entirely = way fewer carbs and calories 🙂 they are really there for crunch/texture. The peanuts will still give you a nice crunch and are more important to the overall flavor of this salad.
Is there anything else I can substitute? I don’t live near RBS and Meatland in Ra’anana didn’t have them.
