I like to cook simple recipes with few ingredients that you can make look more impressive in their presentation.
This is an easy side to serve on Shabbat for dinner or lunch. Not sure how they freeze as I have never tried.
This is adapted from a recipe I found on food.com.

Easy Cauliflower Kugel

Ingredients
- 1 bag Frozen cauliflower
- 2 large eggs
- 1/4 cup light mayonaise 2 tablespoons
- 1-2 tablespoon onion soup mix
- 1 pinch paprika
Instructions
- Cook cauliflower in microwave or steam. Either buy the cut/chopped cauliflower or cut it up or partially mash with a masher after it is cooked. Drain well. Add onion soup mix and mix well. Add slightly beaten eggs and mayo and mix. Pour into a greased pie plate or pan. Sprinkle with paprika. Bake at 350 for 45 minutes.
- I spoon the mixture into cupcake holders to make mini kugels which look more impressive for this simple yummy dish. You just need to adjust the time then and watch until the edges and tops are slightly brown.











How big is your bag of frozen cauliflower? Please, in general, state amounts rather than saying “one package” or “one can”? These things vary from place to place and from time to time?
Yes, sorry about that, this is an old recipe that was contributed by a community member. I would guess about 1 1/2 pounds cauliflower.
Can you boil the cauliflower instead of steaming or microwaving? DOnt have a steamer basket for Pesach, and my microwave is not kashered yet
Sorry for the delay, I would just let it defrost, I don’t think you need to steam it, and boilng might add too much water to it.

Hi Ann- I live in Israel and this recipe does not have anything unfamiliar in it. I buy frozen Gush Katif cauliflower and Osem onion soup mix.
I am making this for Shabbos. It looks wonderful.

Will try this week and hopefully I will enjoy it so that I can make it for Passover.
