Easy Roasted Sweet Potato Wedges

Keep it easy and make the simplest tastiest Sweet potato wedges.

Easy Roasted Sweet Potato Wedges

Prep Time 5 minutes mins
Cook Time 45 minutes mins
Total Time 50 minutes mins

6 Servings

Ingredients

  • 4 sweet potatoes
  • 3 tablespoons olive oil

Instructions

  • Slice 4 sweet potatoes lengthwise and continue to make wedges
  • Place wedges on baking sheet
  • Sprinkle about 3 Tablespoons olive oil
  • salt and pepper to taste
  • mix with hands to get the olive oil, salt and pepper all over each wedge. (I use gloves)
  • Make sure the wedges are not overlapping.
  • Bake at 400 for about 45 minutes.
  • Garnish with parsley
  • Delicious and easy!

    When I buy organic sweet potatoes I leave the peels on and scrub really well. When I buy regular sweet potatoes I peel them, both ways work great.

      I just made them — without the peel this time. You’re right. They’re delicious. Next time I think I’ll leave the peel on to get a crisper result.
