Made famous by Israeli chef, Meir Adoni, we love eggplant carpaccio. It’s like the more elegant cousin of babaganoush. Ok it’s not really a carpaccio but it mimics the effect in a vegetarian way that is super delicious and gorgeous too. It’s also easy to adapt to your tastes or the ingredients in your kitchen. Add cheese if you want dairy or keep it parve, have pomegranate seeds and hazelnuts great, prefer pistachios that is great too.

Eggplant Carpaccio

Ingredients
- 3 pounds 2 large eggplants, pierced with a fork
- Kosher salt and freshly ground black pepper to taste
- 3 tablespoons Extra virgin olive oil plus more finishing
- ¼ cup 100% sesame tahini
- 2 tablespoons Silan date honey
- 3 tablespoons chopped pistachios or other nuts
- 3 tablespoons grated feta cheese
- 2 teaspoons fresh thyme leaves
- 2 teaspoons fresh mint leaves
- 2 tablespoons pomegranate arils
- 1 teaspoon rose water
- Crushed rose petals optional
Instructions
- Roast the eggplant either over the flame of your gas burger, on a grill or under the broiler until charred and soft. Transfer to a cutting board and let cool.
- Once cool enough to handle, peel the eggplants. Once cooled, slice the eggplants into thin ¼-inch slices, carefully removing and discarding any seeds. Place slices on a platter and press with the back of the spoon or your hands to flatten.
- Season with salt and pepper and drizzle with oil. Drizzle with tahini and silan and top with your choice of toppings.
