Fresh Pea and Spinach Sauce over Spaetzl


I recently had some fresh peas from my CSA and my 8 year old son decided he was going to make dinner. Of course he did need a lot of help, but this sauce was all his and it was absolutely delicious on the spaetzl. I can only imagine it on many other foods and it really retained the fresh pea flavor. Listed prep time is for the sauce.

  • 1 cup fresh peeled English peas
  • 1/2 cup fresh leave spinach
  • About 1 tablespoon white wine
  • About 1 tablespoon mascarpone
  • Salt and pepper to taste


Mix peas and spinach leaves in a food processor with a little white wine to get it moving.  Once it is mostly pureed, remove to a bowl and mix in a tablespoon of Mascarpone.  Stir well and mix with fresh hot spaetzl. Top with parmesan and/or fresh ground pepper if desired.

Spaetzl is a type of German egg noodle.  It is much easier to make than any other pasta, especially if you have a potato ricer.
