Fresh Pea and Spinach Sauce over Spaetzle

Ingredients
- 1 cup fresh peeled English peas
- 1/2 cup fresh leave spinach
- About 1 tablespoon white wine
- About 1 tablespoon mascarpone
- Salt and pepper to taste
Instructions
- Mix peas and spinach leaves in a food processor with a little white wine to get it moving. Once it is mostly pureed, remove to a bowl and mix in a tablespoon of Mascarpone. Stir well and mix with fresh hot spaetzl. Top with parmesan and/or fresh ground pepper if desired.

I made a variation of this last night, substituting frozen peas for fresh and wide egg noodles from the freezer section for the spaetzl. These two substitutions made the meal fast, easy, and mess-free. The results were delicious!

This sounds delicious. It might be a good idea to explain (for the people who don’t know) what spaetzl is. I learned to make it at the center for kosher culinary arts where my husband and I enjoyed a couples night out.
