Yes, you read that right. Brownies. This flourless, high-protein dessert is incredibly rich and fudgy.

Forget everything you think you know about cottage cheese. We’re moving past the “diet food of the 70s” and straight into a high-protein, fudgy chocolate paradise.

The internet has been obsessed with cottage cheese lately, and for good reason—it’s the ultimate culinary chameleon. In this recipe, the cheese is blended into a silky-smooth base that acts like a secret weapon, providing a rich, dense structure without the need for heaps of butter or flour. The result? A brownie that is unbelievably moist, packed with protein, and naturally gluten-free.

Whether you’re looking for a post-workout treat or a kid-approved snack that sneaks in some extra nutrition, these brownies are it. They have that perfect crinkle top and a gooey center that feels like a total indulgence, but with a nutritional profile that would make any RD (including me!) smile. Tamar’s Final Secret: While these smell incredible coming out of the oven, patience is a virtue here! These brownies are best enjoyed after cooling in the fridge overnight. The flavors meld, the sweetness deepens, and the texture transforms into a super-dense fudge. In fact, some of my fans even swear by eating them straight from the freezer for a chewy, cold treat that tastes just like a frozen candy bar.

Fudgy 4-Ingredient Cottage Cheese Brownies

The Secret: These are best if they sit in the fridge overnight. The “tang” disappears and they become pure fudgy bliss. Please do not judge them If you try them hot out of the oven.

Ingredients

  • 1 ½ cups cottage cheese 350g
  • 3 eggs
  • ½ cup honey 170 g
  • ¾ cup unsweetened cocoa powder 90g

Instructions

  • Preheat oven to 350°F (177°C). Line an 8×8 inch pan with parchment.
  • Blend cottage cheese, eggs, and honey until completely smooth.
  • Add cocoa powder and blend again until uniform.
  • Bake for 40-45 minutes until the center is set.

    It came out more like chocolate fudge than brownies but they taste fine

    What kind of cottage cheese do you use? Farmers? curd? and what %?
    What kind of honey? Is there a brand? Is it runny or thick, and are they interchangeable?

      I am in Israel so there is not much choice, basic small curd cottage, I use 3-5%. Any honey works.
