Gerri’s Apple Kugel (non-dairy)
It’s dairy free and a perfect side dish to a meal meal.

Ingredients
- 5 medium apples approx. 3 cups, peeled and grated
- Lemon water or Fruit Fresh to prevent browning
- 10 –12 oz fine noodles cooked and drained
- 3 large eggs beaten
- 9 tablespoons sugar
- ¼ cup vegetable oil
- ¾ cup raisins
- ¾ teaspoon ground cinnamon
- ½ teaspoon salt
Instructions
- Prep the Apples: Grate the apples into a bowl of lemon water or Fruit Fresh solution. This keeps them bright and prevents them from turning grey.
- Drain Thoroughly: This is the secret step! Drain the apples in a colander and squeeze out any excess liquid with your hands or a clean kitchen towel. This prevents the kugel from becoming watery.
- Create the Custard: In a large mixing bowl, whisk together the eggs, sugar, vegetable oil, cinnamon, and salt until well combined.
- Combine: Fold the cooked noodles, squeezed apples, and raisins into the egg mixture. Stir gently until everything is evenly coated.
- Bake: Pour the mixture into a greased 2-quart baking dish. Bake at 400°F (200°C) for 40 minutes, or until the top is golden brown and the edges are slightly crisp.
