Ginger Wasabi Cookies

Ingredients
- ¾ cup solid coconut oil
- ¾ cup brown sugar
- 1 egg
- 2 teaspoons vanilla extract
- 1¾ cup whole wheat flour
- ½ cup almond meal
- 1 teaspoon salt
- 3 teaspoons ground ginger
- 4 teaspoons Gold's Wasabi Sauce
- ⅓ cup soy milk
- ⅔ cup chocolate chips
Preparation
1. Preheat oven to 375°F.
2. In a large bowl combine coconut oil, brown sugar, egg, and vanilla; mix with a spatula.
3. In a medium bowl, stir in flour, almond meal, salt, ginger, and wasabi. Our dry ingredients into wet; mix to combine. Add soy milk and stir, then add chocolate chips.
4. Using a tablespoon, form the cookies in your hand and lay on a cookie sheet, spacing evenly so they don't expand and stick together. Gently press the cookies with a fork.
5. Bake at 375°F for 20 minutes. Cool cookies on a wire rack before serving.
