Green Smoothies

Looking for a way to get green veggies into your kids or yourself? Try these green juices, which my sons love so much they often request them for dessert, breakfast, or an afternoon snack. Since they take under 10 minutes to prepare, only require three ingredients, and are fresh and delicious, they're a staple at my house. Make sure to use apple juice; I've tried water in the past to cut down on calories and the result is much less flavorful. And don't skip the step of removing the ribs from the kale--unless you like your smoothies with crunch! Enjoy!

  • 3 cups apple juice
  • 2 cups packed coarsely chopped fresh kale leaves (ribs removed)
  • 2 cups packed frozen mango or pineapple chunks (1 10-oz. bag)


1. Add all of the ingredients to a powerful blender and blend until smooth, about 30 seconds. Serve immediately, while the color is a vibrant green.
