Honey Roasted Nuts with Lime and Mint1

Inspired by the flavors a mojito and the Jamie Geller Honey with Lime and Mint, I developed a simple honey roasted nuts.  No butter necessary but a timer is essential. 

I am notorious for burning roasted and/or candied nuts so Alexa has become my savior, but I do have to tell her to remind me.

  1. Preheat oven to 300°F. Place the nuts on a parchment line baking sheet.  Drizzle with honey, sprinkle with lime zest and salt, toss to coat.
  2. Roast the nuts until golden, about 30 minutes, stirring every 10 minutes.
  3. Remove the nuts from the pan and spread them evenly on wax paper or parchment paper. Allow to cool and crisp up, about 20 minutes. Store in an airtight container, at room temperature.
