Irish Stew

Irish stew, like most traditional stews, is a hearty dish–perfect for those meat-and-potatoes men (or women and children) in your life. Traditionally made with lamb or beef, the telltale sign that you’re eating an Irish stew is that the meat has not been browned. Browning the meat would be oh-so-untraditional in Ireland.

Irish soda bread is a quick bread made with baking soda and raisins. If you can’t find a kosher pareve version, then serve this with biscuits or a raisin challah for a fun twist.

Ingredients

  • 2 pounds cubed stew beef
  • 1 tablespoon kosher salt
  • 1 teaspoon freshly ground black pepper
  • 2 cups baby carrots
  • 3 medium onions peeled and quartered
  • 2 pounds red-skinned potatoes unpeeled, scrubbed
  • 1 32-ounce box chicken broth
  • 1 12-ounce bottle Irish beer, such as Guinness
  • ¼ cup snipped fresh chives

Instructions

  • Season meat with salt and pepper; add meat, carrots, onions, and potatoes to a Dutch oven.  
  •  Add broth and beer and bring to a boil. Turn heat down to a high simmer, cover, and let cook for 30 to 35 minutes, or until potatoes are cooked through and fork tender. Stir in chives and serve with a bread of your choice.

    Yes, but you can cook for longer if you prefer or your meat is cut larger.

    can you add barley to make it a semi irish stew chulent?

    You can use a slow cooker and the alcohol does eventually cook off. It turns to vapor and does not stay in the dish. The whole point of the dish is beer and slow braised meat. The flavor of the beer turns complex sweet and makes the other flavors more earthy.

    Braised dishes are always covered even this with wine and certainly the alcohol cooks out. ENJOY!

    Can this be made in a slow cooker for Shabbat?
    Would it be better without the beer as you can’t cook off the alcohol, (since it’s covered) or not necessarily?

    You can make it without beer and use additional broth or even apple cider.
