Kohlrabi Chips

Kohlrabi is part of the cabbage family, but is really more like a potato. It is a root vegetable and works great in many dishes similar to a potato. Here I turn them into chips.

Ingredients

  • 1 bunch kohlrabi
  • 1 tablespoon olive oil
  • salt and pepper

Instructions

  • Preheat oven 350.
  • Slice kohlrabi thin with a sharp knife or food processor or mandolin. Mix with oil, salt and pepper.  Spread in one layer on baking sheet and bake for about 30 minutes. Checking after 15 and flipping to make crispier.

    I shred it raw with grated carrots and mix with mango mayo dressing.
