Marinated Lupini Bean Snack

Briny and satisfying, lupini beans are a Mediterranean favorite—wonderful enjoyed plain or tossed with a drizzle of olive oil and fresh herbs. Serve them alongside wine and cheese, or offer them as a lighter, protein-rich twist on the classic beer snack.

This recipe is based on my first experience with the beans—a simple dressing that transforms the brined snack into a flavorful, Mediterranean treat.

Ingredients

  • 1 15 oz / 425g jar or package of pre-cooked, brined lupini beans
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh rosemary finely chopped (or 1/2 teaspoon dried)
  • 1/2 teaspoon garlic powder or 1 small clove fresh garlic, minced
  • 1/4 teaspoon red pepper flakes optional, for a kick
  • Freshly cracked black pepper to taste

Instructions

  • Rinse Thoroughly: Pour the jarred lupini beans into a colander and rinse them under cool running water for a full minute. The beans are packed in a salty brine, and rinsing is essential to reduce the sodium content.
  • Drain and Transfer: Drain the beans completely and transfer them to a medium bowl.
  • Marinate: Pour olive oil, lemon juice, rosemary, garlic powder, and red pepper flakes over the beans and toss gently to coat everything evenly. Add a generous grind of black pepper.
  • Chill: Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. For the best flavor, let them marinate overnight!
  • Serve: Serve chilled. Don’t forget the fun part: gently bite the skin to pop the inner bean out! The skin is edible, but most people enjoy discarding it.
