Mashed Potato and Kale Latkes


It is best to use leftover mashed potatoes for this, but if I was going to start from scratch, I would make my favorite potato skins, by microwaving the potatoes, scraping out all the flesh and then baking the skins. Turn the flesh into mashed potatoes by adding your choice of water, milk or broth and mashing well. Add salt to taste. Now you can turn them into these gorgeous, flavorful, and vitamin enhanced latkes.

  • 3 cup mashed Idaho potatoes
  • 1 cup raw kale, chopped
  • 2 cloves garlic, minced
  • 1/2 cup flour
  • oil


Mix mashed potatoes with raw kale and garlic.  Prepare a bowl with the flour to coat the panckaes.

Heat oil in a large frying pan.  Make sure the oil is hot before starting.  Scoop out the potato mix with your hands and turn into a small patty.  Coat with flour and place in the hot oil.  Cook until golden brown then flip and cook the other side.
