  • 1 cup oats
  • 2/3 cup whole wheat flour
  • 1/3 cup coconut sugar
  • 1/3 cup coconut oil
  • 2 tablespoons water
  • 2 tablespoons ground flax seed
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon salt

  • 8 ounces bittersweet chocolate chips (or chopped chocolate bar)
  • 1 cup coconut milk
  • 1 large egg
  • 1 tablespoon vanilla
  • 1 teaspoon cinnamon
  • 1 teaspoon cayenne
  • 1/4 teaspoon salt
  • Cinnamon

  1. Preheat oven to 300F.
  2. Make the crust. Combine oats, flour, sugar, oil, water, flax seeds, cinnamon and salt. Mix well with a fork. Spoon the dough into a 10” tart pan or a pie plate. Use your fingers to evenly press the dough flat and up the sides of the pan.
  3. Bake for 10 minutes.

  1. Place chocolate chips into medium bowl. Heat coconut milk until it steams but make sure it does not simmer or boil. Pour heated cream over chocolate chips. Let sit for 1 minute. Whisk until smooth and glossy. Add egg, vanilla, ground ginger, cinnamon, cayenne, and salt. Whisk until well combined.
  2. Pour filling into the pie crust. Bake for 25-30 minutes, until the center wiggles just a little bit. Remove from oven and cool completely, about 2 hours.
