You won't believe how simple it is to make delicoius creamy spinach with less than 5 ingredients and no cream in site. All you need is a bit of olive oil and a blender to achieve that silky creamy texture.

- 1 small onion, finely diced
- 1 tablespoon extra virgin olive oil
- 1 teaspoon grated garlic
- 1 (10-ounce) package frozen spinach, thawed and strained
- Kosher salt to taste
1 Heat saute pan over high heat, add EVOO and onion.
2 Saute for about 2 minutes, add garlic and spinach.
3 Stir until heated through, add salt to taste.
4 To make it creamy, puree with a hand blender or, it will turn shiny and bright and delicious.
