Peaches and Cream Crepes

Serve this peaches and cream blintz on it's own or as part of a full crepe bar where everyone can make their own. Learn how to set up a crepe bar here.

  • 6 ounces ricotta cheese
  • 1 vanilla bean, scraped
  • 3 tablespoons honey
  • 4 peaches, pitted and sliced
  • ½ cup brown sugar
  • Honey, for drizzling


1. Add peach slices to a bowl and mix with brown sugar. Place on a baking sheet and roast at 400°F until caramelized. Set aside.

2. Mix the ricotta cheese with the vanilla and honey. Spread on basic crepes and top with roasted peaches. Fold and drizzle with honey.
