Prune Stuffed Matzo Balls

I can’t take credit for this recipe and to be honest it is not my favorite, but my dad, Rabbi Paul Plotkin, has been making them for years and has a lot of fans, including two of my kids, so I decided it was time to share it with the world. You can use your best matzo ball recipe, the idea is just putting a prune inside it. The mix of salty soup with the hidden prune is what everyone seems to love. Give it a try and let me know what you think, I’ll make sure to pass it along to my father.

Prune Stuffed Matzo Balls

Ingredients

  • 1/4 cup oil I used coconut oil
  • 4 large eggs
  • 1 cup matzo meal
  • 1-2 teaspoons salt
  • 1/4 cup seltzer
  • 12 pitted prunes
  • 10 cups salted water

Instructions

  • Mix oil and eggs in a medium sized bowl. Add matzo meal and salt and mix well. Add seltzer and mix until well incorporated. Cover and place in fridge for at least an hour.
  • After an hour, bring a pot of salted water to a boil.
  • Scoop out a heaping tablespoon of the matzo ball mix and flatten it in your hand. Put the prune in the middle and wrap the matzo ball around it. Roll it well with your hands and drop into the boiling water. Repeat until all the matzo balls are in the pot. Cover and reduce temperature to low. Let simmer at least 20 minutes.
  • Serve matzo balls in your favorite chicken soup.

    Double the prunes in the matzoh balls to help senior citizens.
