Red Bean Gouda Burger with Carrot Fries

We adapted our Black Bean Burgers to make this Red Bean Gouda Burger - when the burgers are cooking, roast carrot fries on the same pan.

We like to mix up our fries and chips on burger night from sweet potato fries, to blue potato fries, to beet chips and now carrot fries. Try them all.

Notes: Make extra and freeze for later. Once cooled, burgers can be frozen in a single layer.

Ingredients

Red Bean Gouda Burger

  • 1 (15-ounce) can red kidney beans, drained and rinsed
  • 1 onion, grated
  • ½ cup finely chopped walnuts
  • 1 egg
  • 1 tablespoon paprika
  • 1 tablespoon oregano
  • 1 cup cooked and mashed sweet potato
  • 1 cup grated sharp gouda cheese
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • 1 tablespoon extra virgin olive oil
  • 6 whole wheat buns
  • Garnish: avocado slices, sliced tomato, sliced red onion, crisp lettuce leaves

Carrot Fries

  • 2 pounds carrots
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt
  • Freshly cracked black pepper

Preparation

Preheat oven to 400°F. Prepare sheet with parchment paper. 

Red Bean Gouda Burger

  1. Pour beans into a bowl, mash with fork, add grated onion, walnuts, egg, paprika, oregano, sweet potato, cheese, salt and pepper. Form into patties. Grease sheet pan with evoo and place patties on pan. Bake 40 minutes, flipping halfway through.
  2. Serve burgers with whole wheat bun, avocado and onion slices, tomato and lettuce.

Carrot Fries

  1. Using a sharp knife cut carrots into fries.  
  2. Toss carrots with evoo, salt and pepper. Lay fries in a single layer on the sheet pan.  
  3. Roast 20-30 minutes until crisp but not brown, flipping halfway through. Remove from oven and enjoy with our homemade ketchup.
