ROASTED ASPARAGUS WITH HAZELNUT

Roasted asparagus covered in chopped peppers and toasted nuts is easy, delicious, and absolutely gorgeous to serve hot or cold you will love this dish.

Roasted Asparagus with Hazelnuts

Cook Time 10 minutes mins

4 Servings

Ingredients

  • 1 pound asparagus trimmed and cleaned
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1/2 cup finely diced peppers
  • 1/4 cup chopped hazelnuts

Instructions

  • Toss asparagus with olive oil and salt and pepper and place on a cookie sheet.  Turn oven to broil and put the asparagus in watching closely for about 3 -6 minutes.  Once asparagus begins to brown top with peppers and nuts and sprinkle with salt and pepper.  Continue to broil about 5 minutes until everything is browned.
  • Enjoy.

    I used fresh, but roasted would work well too.

    This looks delicious. I also always make asparagus for Passover. It’s my families tradition. What kind of peppers did you use – fresh red peppers or roasted peppers? Thank you so much.
