Roasted Nectarines with Ginger and Honey

I like these nectarines mixed with Greek yoghurt for a dairy dessert. They're also great served with parve honey cake.

  • 6 whole nectarines, pitted and cut into 8 slices
  • 1 whole piece of ginger, grated
  • 3 tablespoon honey (or more to taste) a darker Greek honey is ideal if you can get it
  • 1 quart Greek yoghurt (optional)


Preheat oven to 375.

Spray a 2 quart ceramic/glass baking pan with cooking spray. It should hold the nectarines a little snugly.

Place the nectarines in the dish and sprinkle with grated ginger. Drizzle with honey then mix to combine.

Bake for 60 minutes until a little browned and bubbling.

Serve warm with honey cake (parve) or a scoop of Greek yoghurt.
