Roasted Potatoes

Roasted Potatoes are easy and quick to make and can be served as a side for almost any main dish.  Serve with Turkey Breast and Port Wine Cherry Sauce.

  • 1 pound fingerling potatoes, unpeeled and scrubbed
  • 2 tablespoons canola oil
  • 1 tablespoon kosher salt
  • ½ teaspoon cracked black pepper


1. Preheat oven to 450°F.

2. Place potatoes in a 9- x 13-inch pan. Toss with oil, salt, and pepper to coat. Roast for 25 minutes, shaking the pan every once in a while.
