Roasted Squash Hash with Veggie Sausage

I created this recipe while looking for new breakfast ideas and I had leftover roasted squash, it was so good I have made it part of my regular schedule.

  • 1 teaspoon oil
  • 1/2 medium onion, chopped
  • 1/2 red pepper, chopped
  • 1 morning star farms veggie sausage patty crumbled
  • 1 cup leftover diced roasted squash
  • salt to taste
  • 1 teaspoon oregano


In a large skillet, heat oil and add onion, saute for about 2 minutes.  Add pepper and crumbled sausage patty and saute 2 more minutes.  Add cooked squash, salt and oregano and heat about 2 minutes longer, until all flavors are mixed through and it is hot.

Serve as is with some fruit on the side for a complete breakfast.  If you feel you need more protein a poached or fried egg would go well or some added cheese.
