This a great cheap meal that I use a lot and it freezes well too. You can add spinach for an extra healhty boost.

- 1 (15 oz.) can Salmon, drained
- 1 small onion, finely chopped
- 2 Eggs, beaten
- 2 tsp. Dijon
- 1/4 cup bread crumbs
- 1/4 cup panko
1 Mash up salmon, add the rest of the ingredients except for panko.
2 Mix together and form into small patties.
3 Coat the patties with the panko and set aside.
4 Heat a large frying pan with a thin layer of oil.
5 Cook the patties on both sides until brown.
6 Serve alone or with a blend of regular or pareve sour cream, dill and lemon juice.
