NEVER throw away the greens from your beets, they are sooo good and so easy to prepare.

Ingredients

  • 1 teaspoon olive oil
  • 1 small onion finely chopped
  • 1 clove garlic minced
  • 1 cup chopped beet greens
  • 1 tablespoon toasted pine nuts optional
  • 2 tablespoons raisins optional

Instructions

  •  Heat pan over medium high eat. Add olive oil. 
  •   Sautee onion and garlic until fragrant. 
  • Add greens sauted until wilted. 
  • Top with pine nuts and raisins if desired.

    no salt & pepper? Is it because of the raisins? I think it would be good with salt & pepper as well as the beets also.
