Split Pea Soup - Pressure Cooker

Ingredients
- 1 tablespoon olive oil
- 1 Clove garlic, minced
- 1 onion, minced
- 1 lb bag baby carrots, chopped
- 1 lb. bag of dry split peas
- 1 bay leaf
- 1 package of Sazon seasoning mix (optional)
- Salt and pepper to taste
- 8 cups Water

Preparation
1 Heat pressure cooker pot with oil until hot. Saute onion and garlic on medium until translucent.
2 Add the rest of the ingredients, cover and bring up to pressure. Cook for 20 minutes and then turn off the heat to allow the pressure to slowly release.
3 Serve immediately.

I used to make this soup as an all day affair, now I can make it in less than hour.
