Stuff your chicken with more chicken. This high protein dinner looks so elegant and fancy, but it so healthy and delicious. We used chicken thighs to make sure it stayed super juicy especially when you want to make it ahead, but chicken breasts will work great too.
Make it a meal with a side of Butternut Squash Puree and Roast Cauliflower.

Stuffed Chicken Thighs in Wine Sauce

Ingredients
- 4 ounces ground chicken
- ½ cup oats
- 1 large onion minced (divided)
- 1 large egg
- 2 tablespoons chopped fresh parsley
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- 8 large skinless boneless chicken thighs about 2 1/2 pounds total
- 2 tablespoons extra virgin olive oil
- 6 garlic cloves minced
- 1 cup dry red wine
- 1 15-ounce can crushed tomatoes
- 1 bay leaf
Instructions
- In a medium bowl combine ground chicken, oats, ¼ of minced onion, egg, parsley, salt and pepper.
- Place 1 chicken thigh on work surface and fill with 2 tablespoons stuffing. Wrap chicken thigh around filling and tie with kitchen string. Repeat with remaining thighs and stuffing. Sprinkle with salt and pepper around the outside.
- Heat evoo in a large saute pan. Add chicken and cook until golden on all sides, about 10 minutes. Transfer to plate. Add remaining minced onion and garlic, saute until soft. Add wine, crushed tomatoes, and bay leaf, gently place chicken thighs in sauce. Bring to a boil. Reduce heat, simmer uncovered until chicken is cooked through, about 35 minutes. Use a meat thermometer to check the inside of the chicken to be sure it is over 165°F.
- Serve over noodles, mashed potatoes, or rice.
