Make sure to choose the best avocados: you will have to use them when they are perfectly ripe: not when they are still hard (as they don’t become smooth and creamy) nor when they’ve turned too soft (as the is flavor might be off), so plan accordingly.

Super Creamy Cacao Avocado Mousse

Ingredients
- 2 ripe avocados halved and pitted
- About 6 tablespoons 45 g raw cacao powder
- 1/2 cup coconut milk
- 1/2 cup coconut nectar pure maple syrup, raw honey, or xylithol (or a pinch of stevia)
- 1/2 vanilla bean split and scraped or 1 teaspoon pure vanilla extract
- 1/4 to 1/2 teaspoon sea salt
Instructions
- Scoop out the flesh of the avocado, and place it a food processor. Add in the cacao powder, sweetener, vanilla and 1/4 teaspoon salt and process until completely pureed and aerated. No pieces of avocado should be visible, if there are any, turn processor off and scrape its walls with a silicone spatula. Process again, until completely creamy and smooth. Test the saltiness and add 1/4 teaspoon, if needed.
