
Sweet Potato and Carrot Bake

Ingredients
- 2 pound sweet potatoes peeled and cut into 1/2-inch dice
- 1 pound carrots peeled and cut into 1/4-inch thick rounds
- 1 cup vegetable broth
- 4 tablespoon brown sugar
- 2 tablespoon extra virgin olive oil
- 1 teaspoon orange zest
- 1/2 teaspoon kosher salt
- Freshly ground black pepper
Instructions
- Preheat oven to 400° F.
- Grease a 9-inch square baking dish and set aside.
- In a medium bowl, combine all ingredients and toss to coat. Pour into prepared pan and cover with foil. Bake 30 minutes.
- Remove foil and bake 15 more minutes or until vegetables are tender.











yes you can freeze this. please change out the margarine for extra virgin olive oil. enjoy!
can you do ahead and freeze?

I just tried this to see if we like it enough for the sedar. I cut the recipe in half and it just fills an 8×8 pan. It was good.

Thanks so much for your feedback – I really appreciate it and your adjustment notes will be helpful to others. And I REALLY REALLY LOVE! the idea for leftovers. As a side note I found the Manischewitz All Natural Vegetable Broth to be really flavorful — when I use the Imagine Broths I notice my dishes are more bland and need more salt/spicing up. Additionally I use Earth Balance Non-Buttery Spread which is salted if using margarine then you would have to add more salt.
I prepared this dish for Thanksgiving and felt that the flavor was too bland. I think I would cut the amount of broth by at least half next time. On the plus side, the leftovers made a great base for a nice carrot sweet potato curry soup.

Manischewitz makes an all natural vegetable broth and Imagine Soups makes an Organic No-Chicken Chicken broth and a vegetable I believe — that’s if you want to keep it pareve — but if you don’t mind either way then chicken broth will work just as well. Enjoy!
Can I use chicken stock in place of the vegetable stock for this recipe? I can’t seem to find any vegetable stock at the store….
